Everything we do starts with one pastry: the tarte tropézienne — a brioche split and filled with vanilla cream, born in Saint-Tropez and still the reason our ovens are lit at four in the morning.
How we began
French Riviera Tropézienne Bakery opened its first counter in Henderson with a short list and a long day: butter croissants, pain au chocolat, baguette tradition, and the tarte tropézienne that gave the bakery its name. Word travelled the way it does in a valley of transplants — someone from Nice found the croissant, someone from Marseille found the fougasse, and by the second year we were baking twice as much and still selling out before closing. A second boutique followed on South Cimarron Road in Las Vegas, and in 2026 we opened our third, downtown on 6th Street, with a bistro preparing to serve dinner alongside the bakery.
Why the French Riviera
The Côte d'Azur is not a theme for us, it is a method. Riviera baking is generous but unfussy: good butter, ripe fruit, a lot of cream and very little decoration. That is why our pastry case looks the way it does — glossy fruit tarts and mille-feuille next to a plain baguette, a stack of macarons beside a fougasse studded with olives. It is also why we bake in small batches all day rather than once at dawn. On the Riviera nobody buys yesterday's bread, and neither should anyone in Nevada.
What we make, and what we believe
Our mission is plain: bring real French baking to the Las Vegas valley at a price a neighbourhood can actually afford, and make it fresh every single day. Every viennoiserie is laminated in-house with French butter. Our baguettes and country loaves ferment slowly, with nothing in them but flour, water, salt and yeast. Beyond the case we make sandwiches on our own bread, pull espresso from a French roaster, build celebration cakes to order, and send out catering platters for offices, weddings and parties across the valley. If something is not good enough to serve to our own family, it does not go in the case.
Who runs the bakery
The bakery is family-owned and operated by La Tropézienne Factory LLC, based in Las Vegas, Nevada. The founding family still works the counters and signs off on the cakes, alongside a French-trained head baker and a pastry team that arrives long before the doors open. Our managers at Henderson, Cimarron Road and Downtown each run their own boutique, which is why you will often get a different seasonal special at each one. Come in and ask them what came out of the oven last — they will tell you, and usually hand you a piece.
